Ingredients:

3 kg Gherkins (young tindli)

2 kg Onion

590 ml Vinegar

30 gm Turmeric

2 kg Cauliflower

115 gm Mustard seeds

115 gm Refined flour

1 kg Capsicum

200 gm Sugar

Salt to taste

Method to Prepare Chow Chow:

You have to cook vegetables and immerse for one night in brine. Then drain and prepare on fresh brine till tender. Strain again. Now take vinegar and bring to boil and add a paste made with sugar, mustard seeds, sugar and also little cold vinegar. Blend until mixture thickens and then add vegetables and cook for about 10 minutes.
